Healthy Fudge Brownies using BLACK BEANS!


What do brownies and black beans have in common? Nothing. Absolutely nothing. Actually, I don't really even like black beans, when I go through the line at Chipotle I'm all "pinto please!", but in this recipe I'm going to share today, you might just be surprised how well black beans complement a good pan of brownies. Read on friends, read on!


Just in time for Christmas I want to share with you one of my favorite treats! This recipe for fudgey brownies is gluten free and super easy; I love being able to whip up this these healthy brownies any time I need a chocolate fix. Also, my kids love these brownies! They gobble them up and think I'm the best mom ever for giving them such a delicious treat -now that's a win!


I did not come up with this recipe, but I have tweaked it just a bit to suit my taste buds, feel free to do the same! A friend of mine gave this to me a few years back and I didn't get up the guts to try it until recently; I'm so glad I did!

Healthy Fudge Brownies Directions

Get your blender out friends, this recipe is as easy as it is delicious. Just throw all the ingredients in the blender, sprinkle with toppings, and bake! In less than an hour you will have a wonderful, healthy treat!


Ingredients:

  • 1 Can of Black Beans, Drained and Rinsed Well

  • 3 Eggs

  • 1/2 Cup of Honey (I actually use a little less than a full 1/2 cup because these can get pretty sweet)

  • 1/4 Cup of Coconut Oil

  • 1/4 Cup Cocoa Powder

  • 1/8 tsp of Salt

  • 1 tsp of Vanilla

  • Optional; For essential oil lovers like me you can add a fun twist by adding 10 drops of your favorite Young Living Vitality oil! Peppermint, cinnamon, or orange could all be delicious ways to spice up these chocolate brownies!

Blend all ingredients above and once it has a totally smooth texture, pour mixture into a greased 8x8 or another similar sized pan.


Optional Toppings:

Unsweetened Coconut Flakes

Chopped Walnuts

Sugar Free (or regular) Chocolate Chips


Sprinkle any toppings you desire on top of the brownie mix and then bake at 350 degrees for 45 minutes or until a knife inserted into the middle comes out clean. They may still be a bit wet even after baking and that's okay. Just watch the edges, if they’re starting to dry out they’re done! Seriously though! Never in my wildest dreams would I have believed that brownies and black beans could be such a beautiful duo! I love having a recipe that not only satisfies my need for delectable brownies, but that I can also feed my kids and feel good about. Um plus, brownies for breakfast anyone? With this healthy recipes I say yes!
