Cherry Lime Yogurt Popsicles

It’s summer…and it’s HOT! So recently I’ve been making fun -and healthy!- popsicles for my kids using fresh fruit, greek yogurt, and essential oils! They’re simple, tasty, and packed with all sorts of health benefits! And the best part is my kids gobble them up!
I’ve been on a journey to learn more about essential oils for the past couple of months now and one of the things I have been challenging myself on is to use them for more fun cooking recipes! After a failed attempt to make healthy popsicles for my children out of juice we had in the refrigerator -they took a few bites and decided they didn’t like them 🤷🏻♀️- I decided to try a different concoction.
My imagination was spurred on one day by a few strawberries that were on the edge of being over ripe. My kids aren’t a huge fan of mushy fruit so I decided I throw together some popsicles. Instead of using juice I decided to swap plain greek yogurt for the base. I chopped the strawberries and folded them in. Upon a quick taste-test my concoction was left wanting and I found myself wishing I could make a type of strawberry lemonade popsicle but I was completely out of lemons. And that’s when it hit me; lemon essential oil! I added two drops to the large batch of popsicle mix, added a dash of Truvia to sweeten things up a bit and popped those bad boys in the freezer.
The results wowed. My children chowed and mama was happy because I avoided the sugar and still came out a hero. #majormomwin
After making a few successful batches of strawberry lemonade yogurt popsicles I decided to switch it up a bit; and my cherry lime yogurt popsicles were born! Simple ingredients, fresh taste, and packed with health benefits; what’s not to love!?
Cherry Lime Yogurt Popsicles Recipe
What you'll need:
Popsicle Molds
Plain Greek Yogurt
Fresh Cherries
Lime Essential Oil
Truvia or Sweetener of choice (optional)
A splash of Coconut or Almond Milk
Directions:
Start by pitting the cherries and chopping them into quarters. Put 1 and 1/2 to 2 cups of plain, greek yogurt in a bowl and fold in cherries. Add 2 drops of lime essential oil and a splash of coconut milk to thin out the mixture just bit (you still want it to be nice and creamy!). Sweeten to taste (1 teaspoon or a little more if you want them really sweet) and then dish them into popsicle molds. Freeze overnight or until they’ve frozen completely. Put the popsicle mold under warm water for 30 seconds to loosen the popsicle from the mold and then enjoy!

Alternate Ideas
The best part is this recipe could easily be any flavor you want! With the greek yogurt as the base it makes for an easily adaptable flavor palette that you can easily change! You could do strawberry lemonade popsicles like I mentioned before with strawberries and lemon essential oil; or throw in some raspberries! How about creamy creamsicle popsicles by using orange essential oil and a little extra sweetener? Or toss in some blueberries to make a fun blue and orange pop!
The flavor combinations are literally endless so your kids will never miss the sugar-laden popsicles from the store.
